Ingredients

  • 2 lbs chicken wings, separated into drumettes and flats
  • Vegetable oil, for frying
  • 1/2 cup hot sauce (Frank’s RedHot)
  • 1/4 cup unsalted butter
  • 1 tablespoon white vinegar
  • 1 teaspoon garlic powder
  • Celery sticks and blue cheese dressing, for serving

Instructions

Heat the oil in a deep fryer or heavy-bottomed pot to 375°F.

Pat the wings dry with paper towels to ensure crispiness. Fry the wings in batches for 10-12 minutes or until golden brown and cooked through.

In a saucepan, melt the butter over medium heat. Stir in the hot sauce, vinegar, and garlic powder until combined.

Toss the freshly fried wings in the sauce until evenly coated. Serve immediately with celery sticks and blue cheese dressing on the side.

Buffalo is synonymous with Buffalo wings. These crispy, spicy, tangy delights are an American culinary icon. I first heard the story of their creation from a fellow commuter. Every day I rode the same train, sat with the same people and listened to the wonderful stories they told about life, work, and food. One day there was a discussion on who had the best wings. One of the commuters smiled and said Buffalo’s Anchor bar. He was there on that night when they were created back in ‘64. . It was a cold winter’s night a group of friends dropped by the Anchor Bar, owned by Frank and Teressa Bellissimo. They were hungry so their son, Dominic who was part of this party asked his mother to whip up a late-night snack. All she had on hand were chicken wings which she had reserved for stock. Teressa fried the wings, tossed them in a mixture of hot sauce and butter, and served them with celery sticks and blue cheese dressing thereby accidentally revolutionizing bar food forever.

I vowed to take a trip to Buffalo to experience them for myself. I wasn’t disappointed. The Anchor Bar is THE Destination for wing lovers.
