Irish Potato and Cheese Soup

Ingredients:

  • 1 tbsp butter
  • 1 onion, chopped
  • 2-3 cloves garlic, minced
  • 5 medium potatoes, peeled and diced
  • 2 cups chicken stock (or vegetable stock)
  • ¼ tsp dried thyme
  • 2 cups milk
  • Salt and pepper to taste
  • 1 cup sharp cheddar cheese, grated
  • 1 tbsp chopped fresh parsley (optional)
  • 2 tbsp crumbled bacon (optional)

Instructions:

Melt butter in a large pot over medium heat. Add onion and garlic, sauté for 3-4 minutes until softened.

Add potatoes, stock, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes until potatoes are tender.

Remove half the potatoes and puree them in a food processor or mash them with a fork. Return to the pot.

Stir in milk and heat through, season as needed

Add cheese and stir gently until fully melted.

Garnish with parsley and crumbled bacon, if desired.

Serve warm.
